Feijão Tropeiro (Brazilian Beans with Sausage and Collard Greens)

A traditional Brazilian dish from Minas Gerais, Feijão Tropeiro is made with beans, sausage, bacon, collard greens, eggs and and manioc flour.

Ingredients
∙ Makes 6
Meat
1/2 lb Bacon, thick sliced
14 oz Calabresa sausage
Produce
2 Bay leaves, dried or fresh
1 lb Carioca beans, dry
1 bunch Collard greens
6 cloves Garlic
1 Onion, large
1 Parsley and green onions
Refrigerated
5 Eggs
Baking & spices
1 cups Manioc flour, toasted
1 Salt and pepper
Oils & vinegars
4 tbsp Olive oil
Liquids
6 cups Water
