We included both red pepper flakes and Tabasco sauce in the recipe which gives a gentle heat to the Chicken Cakes. If you don’t like the little bit of heat that these two add, feel free to eliminate one or both.

Ingredients

1 lb Chicken breast, boneless skinless
1 lb Chicken thighs, boneless skinless
1 tsp Poultry seasoning such as bells

1 cup Bell pepper, small red yellow or orange
2 tbsp Garlic, fresh fine
1/4 cup Italian flat leaf parsley, fresh fine
1 cup Onions, small

2 Eggs, whole
Condiments
1 tbsp Dijon mustard
1/2 cup Mayonnaise
4 shakes Tabasco sauce
Baking & spices
1/2 tsp Black pepper, freshly ground
1 tsp Kosher salt
1 pinch Red pepper flakes

Bread & baked goods
1/2 cup Bread crumbs, seasoned
Snacks
1/2 cup Ritz crackers
